It may only be November but it’s never too early for some Christmas spirit… or in this case, Christmas cookies! These Hot Cocoa Cookies are super easy to make and they are every chocolate lovers dream! I hope your friends and family love them as much as we do!
Cookie Recipe
✧ 1 Cup Unsweetened Cocoa Powder
✧ 2 Cups Sugar
✧ 1/2 Cup Vegetable Oil
✧ 4 Eggs
✧ 2 Tsp Vanilla
✧ 2 Cups Flour
✧ 2 Tsp Baking Powder
✧ 1/2 Tsp Salt
✧ 14 – 18 Marshmallows
Frosting Recipe
✧ 3 Cups Powdered Sugar
✧ 6 Tbsp Butter – melted and cooled
✧ 1/4 Cups & 1 1/2 Tsp Cocoa Powder
✧ 1/4 Cups & 2 Tbsp Milk
✧ 3/4 Tsp Vanilla
Cookie Instructions
✧ Preheat oven to 350°
✧ In a large bowl mix Cocoa Powder, Sugar and Vegetable Oil
✧ Beat in eggs one at a time, add vanilla. Mix until smooth
✧ In a separate bowl mix the Flour, Baking Powder, and salt.
✧ Add dry ingredients into the Cocoa mixture. Mix well
✧ Cover the dough and put it in the refrigerator for at least 4 hours.
✧ Once chilled, roll dough into 1 inch palls and place an a greased cookie sheet.
✧ Bake for 8-9 minutes
✧ Press half of a Marshmallow into the center of each cookie and put them back into the oven for 2-3 more minutes.
Frosting Instructions
✧ Melt your butter then allow it to cool to room temperature
✧ In a bowl sift the powdered sugar and cocoa powder. (sifting helps prevent the frosting from being lumpy! Don’t skip this step!!)
✧ Add the butter, milk, and vanilla to the dry ingredients and beat until smooth
✧ Once your cookies have cooled, spoon about 1 Tbsp of frosting onto the top of your cookies!
✧ For some extra fun top with crushed candy canes or sprinkles!
